I use Jimmy Dean or Williams brands of hot sausage to spice this soup up a bit. My husband, who's not much of a soup eater, even asks for this soup on cold fall and winter days. I usually serve it with crusty french bread.

I simplified this recipe from 'The Kopan Cookbook,' a collection of recipes from a Tibetan monastery, which was reviewed and excerpted in the L.A. Times Food Section several years ago. Unfortunately I did not save the name of the author, who had personally collected the recipes during a stay at the monastery, and the distinctive 'Kopan Masala' spice mix she suggested. In retrospect, I wish I'd gone to the trouble of mixing the special spices -- even though I don't know how the soup could be much better!

This is based on Mark Bittman's Elegant Wintertime Tomato Soup, with more tomatoes and less stock, making it thicker and creamier. It makes enough for a family of three to eat all week and stores very well in the refrigerator. This soup has pretty much changed my life, it is so good. I've served it on it's own with bread and butter or with grilled cheese. I've also put a fried egg into it as well and it was great that way too.
