I had the best quesadillas at a restaurant in Vermont while on vacation and I wanted to duplicate them myself. This is what I cam up with and I think it's pretty close. It is a great way to use up all those zucchini. I bake my quesadillas in the oven, but feel free to make them any way you like. Make sure that you serve with fresh pico de gallo and sour cream for the full experience. Enjoy!

A favorite in my house, and a great way to enjoy young summer squash. It's delicious with or without meat but I love bacon!! I have used ground beef, Italian sweet sausage and left over chicken. you can also put this in a baking dish, cover generously with mozzarella and put it in the oven until the cheese is nicely melted. There are no rules! Enjoy.

This came out of the Weight Watchers Cookbook but it is far from tasting like WW. It is 2 points for a one-cup serving and DELICIOUS. These veggies are great reheated or cold in pita bread for lunch with some hummus. They make a wonderful accompaniment to any meat or fish dish. My daughter discovered this recipe and makes it all the time, too. This makes two large baking sheets full of yummy veggies. NOTE: Sometimes I add a couple of handfuls of frozen brussel sprouts (whole) to the sheet in place of the asparagus and sometimes I get piggy and add both.

So many people think they don't like brussels sprouts - it's sad, because they're such a wonderfully tasty vegetable! I figure they must have had them prepared badly when they were younger, because everybody I fix them for change their minds about them. My latest conquest was my husband, who thought he didn't like them, either. He has since changed his mind, of course.
A recipe from my Italian family. Serve with a good Italian bread. Flavor is improved when refrigerated overnight and can keep for a few days in fridge. If stew becomes too thick, can thin out with some chicken broth. I have substituted a 14.5-16 ounce can of diced tomatoes (fire roasted or plain) for the cup of tomato sauce and cup of water or broth.

The kids would love to help make it. You can make this in a 12 cupcake pan or the Texas Jumbo 6 cupcake pan. Use 3 wontons per 12 cupcakes and 6 wontons per the Jumbo 6 cupcakes. Great to make ahead freeze and enjoy one as wanted. Pack and heat for a lunch at work.

To make the soup even yummier, I would suggest that you fry 1 slice of bacon and chop it up. Then using the reserved bacon grease, saute the onions, garlic and chopped bacon as stated.
