A great summer chicken dinner dish. We love avocados at our house so the sauce is almost more popular than the chicken so you might want to double that part of the recipe. Also I like to take whole cumin seeds and use them freshly ground! The flavor is much better.

This is an easy way to "doctor up" a simple can of condensed tomato soup. It could be garnished with crumbled tortilla chips, shredded cheddar cheese, sour cream or all three. I originally made this to serve with my Easy Pepperjack Cheese Quesadillas, but I would also serve it with a simple grilled cheese sandwich or on its own.

Ultimately you would make everything from scratch, but since this is a copycat recipe of a dollar menu junk food item, let's take some shortcuts ;-) Basically it's beef, rice & nacho cheese sauce and Fritos, nuttin' fancy. but ours will taste superior due to the fact it's not a dollar menu item and we can add more beef changing the flavor profile from a rice, fritos and cheese burrito with a minuscule meat flavor to a monumental explosion of culinary bliss! (too much? lol!) Well, I'm a Texan, and this is one of those recipes ya come out the womb ready to make. We like ours spicy. I had to write down my recipe in order to enter a Kosher (yep!) Chili Cookoff. So, here goes! Enjoy...Please note that a TRUE Texas Chili does not have beans, but add them if you must.
I took this Italian dish and brought it to Texas! Texas is known for the cattle and chilies. Seasoned nicely and slow cooked so tender that the meat falls off the bones. No Knife needed here!
Instead of ground beef, this recipe uses cubed beef, which is a nice change of pace from what a lot of people are used to. Serve with Cheddar cheese, green salsa, chopped red onion, sliced avocado, sour cream, and cilantro sprigs.
Not a spicy dish like the other Texas Caviars out there, so I'm calling it 'sweet' due to the sugar. I got this from a friend several years ago and it has been a family favorite ever since. My brother-in-law goes crazy over it. It's a great party or potluck food. We always serve it on Fritos 'scoops', but tortilla chips would work, too.
I have tried a few Copycat Creamy Tomatillo Recipes, and this is by far the best and closest to the original. It make a FABULOUS wrap for a quick healthy meal (tortilla, precooked and seasoned meat, lettuce, tomatoes, cucumbers, dressing, and maybe cheese and sour cream if you like). Absolutely delicious and a quick meal in a pinch as long as you have some pre-cooked and seasoned meat on hand!
