Maple-baked granola

This is a good 'blueprint granola' – follow the basic premise then add nuts and dried fruits of your choosing. Will store in an airtight container for two weeks

Traditional Tourtiere
Traditional Tourtiere

Recipe for individual meat pies [tortieres], popular in Quebec in the Christmas season. The Tourtiere is usually made like a casserole or pie. I don't see any reason why you couldn't make them into "individual" pies, but adjustments would have to be made in the cooking times.

Maple Soy Marinade
Maple Soy Marinade

This came from rummaging through my friend's fridge & cupboard when I was staying in Canada recently. Everyone was shocked when I put maple syrup into a marinade, but it tasted great - even the kids loved the results. Works very well with pork and chicken.

Newfoundland Dressing for Turkey
Newfoundland Dressing for Turkey

Now that I'm engaged to a Newfie, I have started learning the "old family recipes", as well as some new words... Anyhow, this is the dressing that Newfoundlanders enjoy with their turkey - it is really different than the "stuffing" that I grew up with out in BC. This is enough for a 10 lb turkey.

Salmon With Maple and Mustard Seed Sauce
Salmon With Maple and Mustard Seed Sauce

A French-Canadian entree recipe for salmon fillet seared over a high heat and served with a maple mustard seed sauce. I found this recipe on a French-Canadian food website, and have adapted it for posting for the 2005 Zaar World Tour. No serving sizes or preparation or cooking times were provided, so I have provided guesstimates. If you are reviewing this recipe, it would be helpful if you comment on these if you find the times to be different from my guesstimates. Thank you! This recipe was recommended on the website as being a particularly suitable dish to serve during Fall and Spring.

Salmon With Seafood Stuffing
Salmon With Seafood Stuffing

We went fishing in Canada this last summer and caught some wonderful salmon. This is a recipe I developed to use with them. It would work well as a stuffing for mushrooms too with a little Parmesan cheese on the top. It makes one whole salmon which works well for a large group or dinner party. You could also half it easily!

Maple Roasted Almonds With Fleur De Sel Les Fougeres
Maple Roasted Almonds With Fleur De Sel Les Fougeres

These are yummy with drinks, or as a snack. Fleur de sel is formed on the top of evaporating sea water. You can find it in spice shops or specialty shops. Otherwise sea salt should work, perhaps crushed a little. The restaurant in Chelsea Quebec sell these and have often sold out. Edited to add the timing of adding the salt..dont wait til the syrup hardens.

Jasper Lodge Voyageur Stew

David Thompson was a Canadian geographer who mapped most of the country west of Hudson Bay, including the length of the Columbia River. He also recorded some of the earliest information on several northern plains First Nations. This stew is typical of the food his explorer teams lived on.

Sweet Potato Barley Risotto in the Crock Pot
Sweet Potato Barley Risotto in the Crock Pot

For Christmas 2005 my sweet husband got me a bunch of low fat cookbooks. So for my favorite has been a Canadian one called "125 Best Vegetarian Slow Cooker Recipes" by Judith Finlayson. This is an adaptation of a recipe from that cookbook that we enjoyed. If you desire some cheese can be sprinkled on the finished product, but we didn't think it needed it. For the record, I used an olive oil infused with garlic. Olive or vegetable would be good here.

Coriander Chicken-crock pot recipe

Old Fashioned French Canadian Baked Beans
Old Fashioned French Canadian Baked Beans

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.
