Holy smokes this is so good. Trader Joe’s roasted tomato focaccia loaded with pesto, salami, capocola, Provolone, pepperoncini, and a shreddy, tangy Italian salad. Absolutely amazing.
I can't remember where I found this recipe but it's one of my favorites and my daughter's too!! super easy!
I got this recipe from a Campbells Soup add in one of those 'family' magazines years ago. I lost the recipe, but have made it so many times, that I'm posting it here from memory, for safe-keeping. I haven't been able to find this recipe anywhere, including the Campbell's web site, so I'm hoping that my memory serves me well. I cut the green bell pepper into 1/2 inch dice, because it makes a prettier presentation. Enjoy.

The kids would love to help make it. You can make this in a 12 cupcake pan or the Texas Jumbo 6 cupcake pan. Use 3 wontons per 12 cupcakes and 6 wontons per the Jumbo 6 cupcakes. Great to make ahead freeze and enjoy one as wanted. Pack and heat for a lunch at work.

I found this recipe in a Pillsbury Bake-Off publication. I don't cook very frequently but when I do, this recipe is one I make often. My family loves it. Don't overmix as this can cause the chicken and pasta to disintegrate. Also, I double the amounts of taco seasoning, whipping cream, parsley and Parmesan cheese. I find the original amounts (which is what I listed) too dry. I like my pasta creamy.

A great lunchtime recipe. Really nice to enjoy with a cool glass of white wine! I usually make this with the panini bread or a herb focaccia as it toasts really well.
Comfort food that serves a bunch so invite lots of friends or family to help eat it. Freezes very well so you can separate it into several meals if you have a small family or 2 really good sized ones for a family of 4 or 5. Prep time includes boiling the chicken.

Cheap and easy make ahead egg casserole.
Had some leftover BBQ sauce and some left over chicken, but not much of either so I made pizza. Don't overcook the bacon before you put it on the pizza since it will cook in the oven, too. Use your favorite BBQ sauce but go easy on it...a little goes a long way. Adjust the amount to the thickness of your crust. I use about a third of a cup for a thin crust, use more for thick.

There is a funny story behind this. One morning I decided to make "banana sour cream pancakes" which is a favorite around here. When it was time to throw in the sour cream I saw in horror that our sour cream had gone bad!! I said to my husband "should we try ricotta cheese instead?" he looked at me as if I had just crawled out of the TV. LOL. I told him it cant be that bad and we agreed we'd give it a try. Lo & Behold, these are very good. We Loved it. Now we alterante between ricotta & sour creams. lol ;)
