Slow cooker bean chilli

Pack protein into your diet by eating more beans. They're a low-cost way to stretch this vegan chilli further, and it's easily made in the slow cooker

Ingredients

6 serv.
  • onion1

    finely chopped

  • peppers2

    (a mix of colours works well), chopped

  • red kidney beans400g can g
  • black beans400g can g
  • pinto beans400g can g
  • chilli powder2 tsp tsp
  • smoked paprika1 tbsp tbsp
  • garlic granules1 tsp tsp
  • ground cumin1 tsp tsp
  • ground coriander½ tsp tsp
  • dried mixed herbs2 tsp tsp
  • tomato purée2 tbsp tbsp
  • chopped tomatoes2 x 400g cans

    2 x 400g cans

  • coriander leavesfew

    few to serve

Step-by-step instructions

    Tip the onion and peppers into the slow cooker. Pour in all the beans and their liquid, then mix in the chilli powder, ground spices and dried herbs. Tip in the tomato purée and chopped tomatoes, then mix.

    Cook on high for 3-4 hrs, or until the onion and peppers have softened and the sauce has thickened. Sprinkle over some coriander leaves to serve.
