Make healthy, hearty vegan burgers with a layer of avocado, served with a fresh crunchy carrot and cucumber salad. They are packed with goodness.

Place the wholegrain bread and walnuts in a food processor and pulse briefly to obtain fine crumbs.
Pierce the sweet potato with a fork and microwave for 5‑10 minutes until soft. Cut it in half and scoop the flesh into the food processor together with the bread and walnut crumbs. Ensure the black beans are well drained, then add them to the processor along with smoked paprika, cumin, onion granules and tomato puree. Season generously and blend until the mixture is mostly smooth and holds together. Divide the mixture into 4 patties and chill for 20 minutes to firm up.
Meanwhile, prepare the salad by mixing cucumber, carrot, coriander, lime juice and rapeseed oil. Season and set aside.
Heat the oil in a large non‑stick skillet over medium heat. Add the patties and fry 4‑5 minutes per side until golden and heated through. Place a small handful of arugula in each bun. Top with tomato slices, the patty and avocado. Add a spoonful of coconut yogurt or burger sauce to taste. Serve with the carrot and cucumber salad.
