Ingredients

  • olive oil1 teaspoon
  • white pearl onions2 cups
  • baby carrots2 cups
  • leeks2

    well-washed and thinly sliced

  • boneless beef loin15 ounces

    cut into 2-inch cubes

  • low sodium beef broth1 cup
  • low sodium chicken broth1 cup
  • tiny new potatoes20 ounces
  • green beans2 cups

    cut

  • flat leaf parsley2 tablespoons

    minced

  • fresh dill2 tablespoons

    minced

  • lemon zest1 teaspoon

    grated

  • fresh lemon juice1 tablespoon

    to taste

  • fresh ground black pepper1⁄4 teaspoon

Step-by-step instructions

    In large nonstick saucepan, heat oil; add onions, carrots and leeks.

    Cook over medium heat, stirring frequently, 6-7 minutes, until onions are lightly browned.

    Remove vegetable mixture from saucepan; set aside.

    In same saucepan, cook beef over medium heat, stirring frequently, 8-10 minutes, until beef is browned on all sides and cooked through.

    Add beef and chicken broths; bring liquid to a boil.

    Reduce heat to low; simmer, covered, stirring occasionally, 1-1 1/2 hours, until beef is tender.

    Add potatoes, green beans and reserved vegetable mixture to beef mixture; simmer, covered, 15-20 minutes, until vegetables and beef are very tender.

    Stir in parsley, dill, zest, juice and pepper.

    Divide evenly among 4 bowls and serve.
