Ingredients

  • butter1 cup
  • thyme1⁄2 teaspoon
  • pepper1⁄2 teaspoon
  • salt1 teaspoon
  • basil1⁄2 teaspoon
  • parsley1⁄2 teaspoon
  • garlic powder1⁄2 teaspoon
  • onion powder1⁄2 teaspoon
  • fresh lemon juice1 1⁄2 teaspoons
  • flour tortillas8
  • lobster tail meat, cooked and chopped2 lbs
  • brie cheese, cut into 1/2-inch wedges1 lb
  • roasted peppers, chopped1⁄2 cup
  • green onion, sliced1⁄2 cup
  • shallot, minced1⁄2 cup
  • cup fresh basil, julienned1⁄2
  • cup cooked bacon, chopped1⁄2
  • cup parmesan cheese, grated1
  • cooking spray

Step-by-step instructions

    Preheat oven to 350 degrees.

    In a medium saucepan over medium heat combine the first 9 ingredients (from butter to lemon juice) Cook until just melted and the herbs and spices are well incorporated.

    Set Aside.

    Lightly coat a baking dish with cooking spray.

  5. 5

    Fill evenly all of the tortillas with the lobster meat, brie, roasted peppers, green onions, shallots, basil and bacon.

    Tightly wrap and place in prepared baking dish.

  7. 7

    Drizzle on herbed butter, coating each enchilada well.

  8. 8

    Top with the grated Parmesan cheese.

  9. 9

    Bake for 15 minutes, until brie is melted and tortillas are golden.

    Serve hot.
