To make the soup base, heat a large 2‑liter wok or deep wide pot over high heat and add the oil. Add the chilies and Sichuan pepper and stir quickly for 5 seconds until fragrant.
Add the chili bean sauce and pour in the broth. Add the dried Chinese mushrooms, star anise, dried mandarin zest (optional), then pour in chili oil, add ginger and bring to a boil. Add the Chinese cabbage and cook for 2 minutes, then stir in the green onions.
Mix the ingredients for both sauces in separate bowls and set aside.
Place an induction cooktop in the center of your dining table and surround it with plates of your favorite raw ingredients. Put the wok filled with broth on the stove to keep it simmering.
Each person can add their ingredients to cook in the broth, using a metal wire ladle to retrieve them. Cook the seafood, chicken and pork until fully done, and the vegetables to taste. Serve with dipping sauces.
