Place the onion in a food processor and pulse until it resembles rice. Heat 1 tbsp oil in a large skillet, add the onion and sauté for 10 minutes until soft and slightly golden. Add the garlic and sauté for another minute. Transfer the mixture to a large bowl.
Place the mushrooms in a food processor and pulse until they also resemble rice. Heat the remaining oil in a skillet, add the mushrooms and sauté for 10‑15 minutes until the released liquid evaporates and the mushrooms become tender. Transfer to the bowl with the onion.
Add the tofu, beet, beans, tomato paste, vegan mayo, miso paste, oat flour and ground flaxseed to the food processor together with the seasonings and blend to a uniform mixture. Transfer to the bowl with the vegetables. Add the pecans and half of the rice to the processor and pulse until finely chopped, or coarser if you prefer. Transfer to the bowl with the vegetables and tofu, together with the remaining rice.
Using your hands, shape the mixture into patties roughly the size of your burger buns. The patties will be crumbly, so chill them for at least 30 minutes before cooking. If you plan to grill, freeze them first for 30‑45 minutes until firm.
Heat a skillet over medium heat or fire up the grill and lightly oil both sides of the patties. Cook 5‑8 minutes per side, flipping once after a crust forms, until they are browned and heated through to the centre. Avoid frequent moving or flipping, as they are more fragile than meat patties. A few minutes before done, add the cheese if using (see tip below). Toast the buns on the grill or in a skillet, then spread each with a little chili jam. Fill with a few lettuce leaves, the patties, and mashed avocado mixed with squeezed lime.
