Ingredients

  • fresh ground pork1 lb
  • favourite brandy2 ounces
  • garlic, minced1
  • olive oil1 tablespoon
  • scallions, diced2
  • boiled drained and diced into cubes potato1
  • fresh parsley2 tablespoons
  • whole cloves3
  • Worcestershire sauce1 tablespoon
  • ground sage1 tablespoon
  • salt1 teaspoon
  • black pepper1⁄4 teaspoon
  • Sauce chop all fine
  • sweet red peppers or 1 green pepper, diced1
  • stalk celery, diced1
  • onion, diced1
  • canned tomatoes, with some juice5
  • cup white sugar1⁄3
  • cup white vinegar2⁄3
  • teaspoon cinnamon1⁄4
  • teaspoon crushed red pepper flakes1⁄8
  • teaspoon mustard seeds1⁄4
  • teaspoon salt1
  • teaspoon celery seed1⁄4

Step-by-step instructions

    Sauce: Add all the ingredients listed for sauce into a pot, and simmer over med.

    to low heat for 2 hours.

    Serve this with the pie on the side.

    Filling for pork pie; Place the pork and brandy into a bowl and marinate for two hours.

    Saute the garlic in oil with the gren onions.

    Add the marinated pork and start to brown.

    Drain as much fat as possible off.

    Add the seasonings and cook for ten minutes.

    Add the small cubes of boiled potato and mix well.

    Pour into a favourite uncooked pie shell, top with a top crust.

    Brush with egg beaten with 1 tsp.

    Bake 425 degrees for 5 minutes.

    Reduce oven to 350 degrees, bake 30 minutes.

    Note-- I have mashed the potato instead in my recipe, so it would not be as noticeable.
