Cajun-style prawn cocktail

Revive the classic Christmas prawn cocktail. Adding Cajun spices gives it a rich flavor and a modern look.

Ingredients

  • king prawns225g frozen raw peeled g

    defrosted

  • buttermilk100ml ml

    (if you can’t find buttermilk, mix the same amount of yogurt with juice of ½ lemon)

  • iceberg lettuce½

    finely shredded

  • avocado1 ripe

    pitted, halved, peeled and thinly sliced crosswise

  • vegetable oil

    for frying

  • spring onionдрібно нарізані

    for garnish

  • smoked paprika3 tbsp tbsp
  • ground black pepper½ tbsp tbsp
  • ground white pepper½ tbsp tbsp
  • garlic powder1½ tbsp tbsp
  • onion powder1½ tbsp tbsp
  • dried oregano2 tsp tsp
  • dried thyme1 tsp tsp
  • cayenne pepper1-2 tsp tsp

    (to taste)

  • mayonnaise4 tbsp tbsp

Step-by-step instructions

    First, mix all ingredients for the Cajun seasoning. In a large bowl combine the shrimp with the buttermilk and 3 tbsp of Cajun seasoning, then set aside.

    For the sauce, mix all ingredients in a small bowl. Season and set aside. For the coating, combine all ingredients in a separate bowl with the remaining Cajun seasoning and a pinch of salt, then set aside.

    Take one shrimp at a time, gently shake off excess buttermilk mixture, then coat it in the breading using a fork, turning to fully cover, and place on a plate. Let rest for 15 minutes.

    Fill each glass almost to the top with lettuce leaves, then add 2 tbsp of sauce to each. Distribute avocado slices among four martini glasses, arranging them in a fan against the rim so the tops protrude over the edge.

    Heat oil to a depth of 10 cm in a shallow pot or fryer to 180 °C, or until a bread cube dropped in oil browns in 20 seconds. Fry the coated shrimp in batches of 10 for 4‑5 minutes until golden and crispy. Transfer them to a plate lined with paper towels using a slotted spoon to drain. Repeat until all shrimp are cooked, then season with salt and distribute among the glasses. Sprinkle with finely sliced spring onion.
