Quick & easy Korean pork

Sweet and spicy marinated pork belly served with crisp fresh lettuce makes a sensational barbecued dish

Ingredients

4 serv.
  • good-quality pork belly500g g

    skin and ribs removed (you can ask your butcher to do this), carved into thin slices

  • large lettuce1

    such as Little Gem or iceberg, leaves washed and separated, cooked white short-grain rice, to serve

  • Conference pears2

    peeled and cored

  • white onion½ ½
  • garlic cloves3 3
  • thumb-sized piece ginger
  • spring onion1 1
  • soy sauce1 tbsp tbsp
  • brown sugar2 tbsp tbsp
  • toasted sesame oil1 tbsp tbsp
  • Korean chilli paste2 tbsp tbsp

    (or any Asian chilli paste)

  • Korean soy bean paste3 tbsp tbsp
  • Korean chilli paste1 ½ tbsp tbsp
  • mirin2 tbsp tbsp
  • roasted sesame oil1 tsp tsp
  • sesame seed1 tsp
  • spring onion½

    white part only, finely chopped

Step-by-step instructions

    Put all the ingredients for the marinate in a food processor and blend until smooth. Season to taste, then pour over the sliced pork. You can now cook the meat straight away, but for best results allow it to marinate in the fridge for at least 30 mins.

    Make the ssamjang sauce (if using) by mixing all of the ingredients together, then set aside.

    Heat a griddle pan over a high heat and cook the pork in batches for 2-3 mins each side until charred and cooked through. Serve with white rice and a few lettuce leaves. To eat, place a small scoop of rice in a leaf, then a piece of pork, smear with ssamjang sauce (if using) and wrap up.
