Ingredients

  • shrimp1 lb

    peeled and deveined

  • egg noodles1 lb

    cooked according to package directions

  • Stir fried Vegetables
  • sesame oil1 tablespoon

    fiery

  • peanut oil or vegetable oil1 tablespoon
  • snow peas1 cup

    julienned

  • purple cabbage1 cup

    thinly sliced

  • carrot1⁄2 cup

    julienned

  • parsnip1⁄2 cup

    julienned (Can use all carrot or all parsnips in place of the mix)

  • red bell pepper1 cup

    julienned

  • Peanut Sauce
  • garlic cloves3

    minced

  • hot water1⁄4 cup
  • basil2 tablespoons

    (cilantro or mint)

  • peanut butter3⁄4 cup
  • cup rice wine vinegar1⁄3
  • tablespoon honey or 1 tablespoon sugar1
  • tablespoons low sodium soy sauce2
  • teaspoons gingerroot, minced2 -3
  • teaspoon red pepper flakes1⁄2 - 1
  • tablespoons sriracha sauce (optional)2
  • Garnish
  • scallions3
  • peanuts, sliced and toasted (optional)
  • basil, Cilantro (optional) or mint (optional)

Step-by-step instructions

    Mix sauce ingredients together in a blender to combine. Set aside. In a large frying pan heat the oils and stir fry the pea pods, carrots and cabbage just until crisp. Season vegetables with additional soy sauce if desired. Add shrimp and cook until just pink. Mix in the peanut sauce mixture. Add the hot cooked noodles tossing to coat. Adding pasta water to thin if needed.

    Plate and top with scallion and optional ingredients.
