  • red Leicester50g g

    cut into 12 small cubes

  • shrimp12
  • lemon½

    juiced

  • cucumber½

cut into 2 even parts and grated into strips

  • sesame oil1 tsp tsp
  • sesame seeds1 tsp tsp
  • bamboo skewers36

(or reusable) short skewers or long toothpicks

Step-by-step instructions

  1. 1

To create the “hedgehog” that will hold the skewers, use a grapefruit, cutting off the base flat, or use a cucumber to make a longer holder.

  2. 2

For mozzarella and tomato skewers: place the mozzarella in a bowl, mix pesto with olive oil and drizzle it over the cheese. Wrap a basil leaf around each mozzarella ball and thread them onto skewers, alternating with tomatoes.

  3. 3

For cheese and pineapple skewers: place a piece of pineapple between a piece of cheddar and a piece of red Leicester on a skewer. If you want it very neat, trim the pineapple to the size of the cheese (the scraps can be eaten).

  4. 4

For shrimp skewers: place the shrimp in a bowl, squeeze lemon and season with pepper, no salt. Place cucumber in a bowl, add sesame oil and seeds and mix. Roll a strip of cucumber onto a skewer, then a shrimp, then another cucumber strip.

  5. 5

Insert all skewers into your “hedgehog” or arrange them on a platter, separating each type.
