  • medium potatoes (cut into 1 inch chunks)5
  • medium red bell pepper1
  • medium onion (sliced)1
  • boneless skinless chicken breast (cut into 1 inch cubes)1 lb
  • chopped tomatoes1 1⁄2 cups
  • ground coriander1 tablespoon
  • paprika1 1⁄2 teaspoons
  • grated fresh ginger (or 1/4 t ground ginger)1 teaspoon
  • salt3⁄4 teaspoon
  • crushed red pepper flakes1⁄2 teaspoon
  • ground turmeric1⁄2 teaspoon
  • ground cinnamon1⁄4 teaspoon
  • ground cloves1⁄8 teaspoon
  • chicken broth1 cup
  • cold water2 tablespoons
  • teaspoons cornstarch4

Step-by-step instructions

    Put the potatoes, red bell pepper, and onion in the bottom of a 6 quart crock pot and place chicken on top.

    In a medium bowl mix the tomatoes, all spices, and the chicken broth.

    Pour over chicken.

    Cover and cook on High 4- 5 hours (or Low for 8- 10).

    If using low, switch to high.

    Combine cornstarch and water and add to crock pot.

  7. 7

    Cover and cook for an additional 20 minutes.
