If you’re making the dough yourself, measure 150 ml warm water into a jug and stir in the yeast. Leave for 10 minutes until frothy. (If you’re using two ready‑made bases, skip to step 6.)
Meanwhile, combine plain flour, 2 tsp salt and golden sugar in a large bowl. Make a well in the centre and, after 10 minutes, pour in the water with the yeast, then mix with clean hands or a wooden spoon.
Form the dough into a ball, lightly oiling your hands. Knead on a lightly floured surface for 5‑10 minutes until smooth. Wipe the bowl and lightly oil it. Place the dough in the bowl, cover and let rise in a warm place until doubled, about 1 hour.
Knock the air out of the dough, then split into two balls, lightly oiling your hands. Place them on a lightly floured surface, cover with a damp kitchen towel and let rest for 30 minutes.
Preheat the oven to 240 °C (200 °C fan) or gas 8. Stretch the dough into two round bases, then transfer them to two separate trays (ideally with holes underneath for a crisp crust).
Whisk the dressing ingredients with a fork, then lightly oil each base. Distribute the stilton between the bases. Bake 8‑10 minutes until crisp and the cheese has melted.
Meanwhile, mix the remaining topping ingredients with the leftover dressing. Spread them over the pizzas, sprinkle with finely chopped parsley and slice for serving.
