Try a meatless tofu-based dish served with rice and green beans. The braised dish is rich with spicy and umami flavors that soak into the tofu.
Pat dry the block of tofu with a paper towel and cut it lengthwise in half, then slice into 1 cm thick pieces. Place them on a plate lined with kitchen paper, cover with another sheet of paper and a plate to press while you prepare the braising mixture. Mix the soy sauce with mirin, gochujang, garlic, sesame seeds, most of the green onions, and 200 ml water.
Heat the oil in a pan over medium‑high heat and fry the tofu 4‑5 minutes on each side until golden brown. Pour in the soy‑sauce mixture and add the green beans. Bring to a gentle boil and cook over medium heat for 10 minutes, until the braising sauce thickens and the green beans become tender.
Sprinkle with the remaining green onions, squeeze lime juice to taste, season with salt and serve with brown rice.
