Bill's Easy Fresh Marinara Sauce

Summertime is a time when really good tomatos are avalible. It is also the time of year you want to stay away from hours in front of a hot stove. This recipe is really quick and above all FRESH. The recipe is for 2 or 3 people but I see no reason you can't double it. It is a little spicey but the freshness makes this a great sauce. Make sure you get great tomatoes, it makes a big difference. Enjoy!

  • tomatoes3
  • teaspoons olive oil (extra virgin)5
  • Spanish onion1
  • bell pepper (red)1⁄2
  • garlic cloves4
  • tablespoons basil (fresh)3
  • tablespoon oregano (fresh)1
  • tablespoon chives (fresh)1
  • fresh ground black pepper
  • teaspoon red pepper flakes1⁄2
  • teaspoon garlic powder1
  • teaspoon sea salt1
  • tablespoons tomato paste4

Step-by-step instructions

    Chop tomatoes.

    finely chop onion , bell pepper, garlic, and fresh herbs. Put olive oil and onions, bell pepper and garlic in iron skillet and cook over med high heat for 5 or so minutes. add tomatoes and all spices and cook covered for 15-20 minutes.add the tomato paste and cook till thickened. serve over half a box of cooked pasta . Add a grated fresh italian cheese and enjoy with a fresh salad. Did you notice I said fresh? I hope you enjoy this. Have a happy summer.
