Heat a pan over medium heat and lightly toast the pine nuts for 2–3 minutes until they turn golden. Transfer them to a bowl.
Transfer the borlotti beans to a large bowl and mash them with a potato masher or fork. Add the toasted pine nuts, finely chopped red onion, sun‑dried tomato paste, half of the breadcrumbs, thyme leaves and the beaten egg. Season to taste and gently mix into a uniform mixture.
With slightly dampened hands, shape the mixture into four patties. Coat each in the remaining breadcrumbs, cover and chill in the refrigerator for at least 30 minutes.
To fry the patties, heat a thin layer of sunflower oil in a large pan and fry them 3–4 minutes on each side until golden. Drain on paper towels and serve in warmed flatbreads, tortillas or pitas, drizzled with basil tzatziki.
