Banana & Walnut Cake

I wanted to make a cake that used more natural ingredients without compromising on taste, I've added wheatgerm (best source of Vitamin E) & LSA mix which is common in Australia. You can use ground linseed (flax seed) if you don't have LSA. Make sure the bananas are very ripe! My husband loves this cake and it was a great way to get a treat that is secretly beneficial!

Ingredients

  • sugar1 1⁄4 cups
  • butter2⁄3 cup
  • eggs3
  • whole wheat flour1⁄2 cup
  • oat flour1⁄2 cup
  • spelt flour1 cup
  • wheat germ1⁄4 cup
  • ground flax seeds1⁄4 cup
  • desiccated coconut1⁄4 cup
  • mixed spice1⁄2 teaspoon
  • buttermilk5 teaspoons
  • walnuts1 cup

    chopped

  • vanilla1 teaspoon
  • baking powder3 teaspoons

Step-by-step instructions

    Heat oven to 170°C; butter or oil the pan.

    Cream the butter and sugar, add all the wet ingredients slowly while beating.

    Combine the dry ingredients with a wooden spoon into the wet mixture and pour into the pan (it will be very thick).

    Cook for 40-60 minutes or until the skewer comes out dry.
