Juicy white fish in a fragrant mint‑mango sauce – light, piquant and low‑calorie. Make it in 30 minutes and impress yourself with a new taste that perfectly complements a summer feast.

Preheat the oven to 200 °C (180 °C with convection) or gas mark 6. Place the fish fillets in a baking dish. Prepare the sauce: blend the chopped chili, mango, ground cumin, grated ginger, mint leaves, mango chutney and lime juice, then spread a quarter of the sauce evenly over each fillet and smooth it with your fingers.
In a food processor pulse the bread together with garam masala and turmeric into a fine crumb. Add olive oil and pulse again briefly.
Sprinkle the crumb evenly over the sauce‑coated fillets. Cover the dish with foil and bake for 10 minutes. Remove the foil and bake another 5 minutes until the fish flakes easily and the crumb is golden. Serve with a green salad – recipe below.
