Step-by-step instructions

    Heat 2 tbsp of pure honey in a non‑stick pan, add 3 tbsp fish sauce and stir until a uniform syrup forms. Remove from heat and let cool.

    In a large bowl combine 450 g ground pork, the cooled honey‑fish syrup, 4 finely chopped green onions, 1 minced garlic clove, 2 tsp finely chopped lemongrass, 1 tsp corn starch, 1 tbsp finely chopped mint, 2 tbsp finely chopped cilantro, salt and a generous amount of black pepper. Mix until the ingredients are evenly distributed.

    Shape the mixture into 20 balls, place them on a parchment‑lined tray, and chill in the refrigerator for 30 minutes.

    While the balls chill, prepare the sauce: combine 1 tsp chopped cilantro, 3 finely chopped green onions, 2 tbsp lime juice, 2 tbsp light soy sauce, and 1 tsp sesame oil. Set the sauce aside.

    Brush the chilled balls with olive oil and pan‑fry them in a dry skillet for 3–4 minutes per side until a golden crust forms.

    Serve the hot meatballs with the prepared dipping sauce.
