Combine the marinade ingredients with a pinch of salt and freshly ground black pepper. Add the chicken thighs and toss so the meat is well coated. Let marinate for at least 20 minutes or overnight.
Prepare the tzatziki sauce: mix the yogurt, grated garlic, lemon zest and juice, olive oil, mint, cucumber and spices. Set the sauce aside.
Cook the fries according to the package instructions in your air fryer (≈200 °C, 15–20 minutes, shaking every 5 minutes). If you have a two‑section air fryer, cook the fries and chicken simultaneously. If the air fryer has a single section, first bake the fries, then add the chicken and cook at 180 °C for 20–25 minutes, turning halfway through. Once done, remove the chicken, let it rest for 5 minutes, and re‑heat the fries for another 5 minutes at 200 °C.
Slice the rested chicken. On each flatbread spread a layer of tzatziki, then tomato slices, thinly sliced red onion, chicken and crispy fries. Roll the flatbread into a wrap, optionally wrap in parchment paper and serve immediately.
