Description
Herring are forage fish, mostly belonging to the family Clupeidae. Herring often move in large schools around fishing banks and near the coast, found particularly in shallow, temperate waters of the North Pacific and North Atlantic Oceans, including the Baltic Sea, as well as off the west coast of South America.

How to choose
Choose herring that has clear, bright eyes and firm, shiny flesh. Avoid fish that smells overly fishy or ammonia-like. Look for a silvery sheen on the skin. Consider the brine – it should be clear, not cloudy. Pickled herring should have a pleasant, slightly sour aroma.
How to store
Store herring in its original packaging, submerged in brine, in the refrigerator. Consume within 3-5 days of opening. If the brine becomes cloudy or the fish develops an off-odor, discard it. Frozen herring can be stored for up to 3 months, but the texture may change upon thawing.
