Roman Apple Crumb Cake

I love anything with apple and cinnamon and had to give this one a try. It's comfort food - great with vanilla ice cream or on its own. My kids love this as a snacking cake and it freezes well.

Ingredients

  • sugar1 cup
  • eggs, beaten2
  • milk2⁄3 cup
  • vanilla1 1⁄2 teaspoons
  • flour2 1⁄2 cups
  • salt1⁄4 teaspoon
  • baking powder1⁄2 teaspoon
  • baking soda1 1⁄2 teaspoons
  • clove1⁄2 teaspoon
  • cinnamon1 teaspoon
  • apples, peeled and chopped3 cups
  • Topping
  • melted margarine2 tablespoons
  • cinnamon2 teaspoons
  • cup brown sugar1⁄3
  • teaspoons flour2
  • cup quick-cooking rolled oats1⁄2
  • cup chopped nuts or 1/2 cup coconut (optional)1⁄2

Step-by-step instructions

    Cream the margarine and sugar.

    Add the eggs, milk, and vanilla and beat well.

    Add the rest of the dry ingredients and mix.

  4. 4

    Fold in the chopped apples.

  5. 5

    Pour batter into a floured 9x13 pan.

    Mix all the topping ingredients together and sprinkle over batter.

    Bake cake at 350 for 35 minutes.
