Mexican Vegetable Soup

I usually like recipes with some sort of meat in them but this was excellent. There is very little fat except what is in the olive oil used to sauté the onions and garlic. Really worth all the chopping!

Ingredients

8 serv.
  • olive oil2 tablespoons
  • onion, finely chopped1
  • garlic cloves, minced4
  • ground cumin1⁄4 teaspoon
  • cayenne powder1 dash
  • carrot, sliced1
  • potato, peeled and diced1
  • crushed tomatoes12 ounces
  • zucchini, diced1
  • head cabbage, shredded1⁄4
  • vegetable stock or 4 cups beef stock4 cups
  • frozen corn4 ounces
  • green beans, cut10
  • chopped cilantro4 -6 tablespoons

Step-by-step instructions

    Sauté onion and garlic, then add cumin and cayenne powders.

    Stir in carrot, potato, zucchini and cabbage and cook for 2 minutes.

    Pour in stock and tomatoes and cook until tender.

    Stir in corn and beans and cook until beans are tender.

  5. 5

    Turn off the heat and stir in the cilantro.

  6. 6

    Salt and pepper to taste.
