Easy oven-cooked Jamaican brown stew chicken

Try this classic one‑pot Jamaican chicken stew in a rich, spicy brown sauce. Serve with rice, peas and sauerkraut if you like.

Ingredients

4 serv.
  • chicken1.6kg whole kg
  • demerara sugar1½ tbsp tbsp
  • hot chicken broth400ml ml
  • browning sauce1 tbsp tbsp

    (I use Grace)

  • plain flour1 tsp tsp

    mixed with 25ml cold water

  • green onion1-2

    chopped, for serving

  • rice

    and peas and sauerkraut, for serving (optional)

  • thyme sprigs8
  • onion1

    finely chopped

  • garlic cloves2

    minced

  • Scotch bonnet pepper½

    minced

  • tomatoes2

    sliced into wedges

  • universal seasoning2 tbsp tbsp

    (I use Dunn’s River)

  • chicken seasoning1 tbsp tbsp

    (I use Dunn’s River)

  • pimento seeds6 whole

    crushed

Step-by-step instructions

    Remove the skin from the chicken, separate it, cut the breasts in half and set aside the legs and thighs.

    Place the chicken pieces in a large bowl with all the marinade ingredients. Mix, then rub the mixture into the chicken. Cover tightly and refrigerate for 24 hours.

    Preheat the oven to 200 °C/180 °C with fan/gas 6. Transfer the chicken with the marinade to a deep ovenproof dish. Cover and bake for 40 minutes, then remove the lid and add the sugar, broth, browning sauce and flour mixture. Bake for another 15 minutes uncovered, turning the chicken and basting it every 5 minutes.

    Check if the chicken is cooked through. If not, bake for another 15 minutes and check again. Taste, then sprinkle with green onion and serve with rice, peas and sauerkraut if desired.
