Try this classic one‑pot Jamaican chicken stew in a rich, spicy brown sauce. Serve with rice, peas and sauerkraut if you like.

Remove the skin from the chicken, separate it, cut the breasts in half and set aside the legs and thighs.
Place the chicken pieces in a large bowl with all the marinade ingredients. Mix, then rub the mixture into the chicken. Cover tightly and refrigerate for 24 hours.
Preheat the oven to 200 °C/180 °C with fan/gas 6. Transfer the chicken with the marinade to a deep ovenproof dish. Cover and bake for 40 minutes, then remove the lid and add the sugar, broth, browning sauce and flour mixture. Bake for another 15 minutes uncovered, turning the chicken and basting it every 5 minutes.
Check if the chicken is cooked through. If not, bake for another 15 minutes and check again. Taste, then sprinkle with green onion and serve with rice, peas and sauerkraut if desired.
