Curried Aubergine with Bavette Steak

Creamy coconut and light spices on aubergine pair wonderfully with bavette steak. Optionally replace naan with rice or even homemade poppadums.

Step-by-step instructions

    Heat the oil in a covered frying pan over medium heat. Add the shallots and cook for 8 minutes, stirring occasionally, until they become soft. Add the garlic and cook for another minute, then add the spices. Cook for another 30 seconds until fragrant.

    Add the aubergine and stir well to coat with the spice mixture. Add the creamy coconut, a pinch of salt and 500 ml boiling water. Mash the coconut with the back of a wooden spoon, cover and cook for 15 minutes until the aubergine is soft.

    Meanwhile, preheat the oven to 180 °C/160 °C with convection/gas 4. Spread butter on the naans, wrap the leftover cooked bavette steak in foil, then place both on a large baking tray to warm for 5 minutes. Tear the naan into pieces.

    Taste the aubergine and then place the bavette steak in the center of the curry. Sprinkle with sliced almonds, pomegranate seeds and a spoonful of natural yogurt and mango chutney, if using. Serve straight from the pan at the table, with naan on the side for scooping.
