Coronation Chicken Scones

What could be more British than this combination of a scone and coronation chicken? Perfect for a summer party or picnic.

Ingredients

  • self-raising flour225g г

    plus extra for dusting

  • baking powder1 tsp
  • cold butter140g г

    cut into small pieces

  • milk150ml мл
  • black cumin seeds1 tbsp
  • egg1

    beaten

  • cooked chicken breasts3

    finely chopped or shredded

  • mango chutney100g г
  • mild curry seasoning2 tsp
  • natural yogurt150g г
  • mayonnaise75g г
  • coriandersmall bunch

  • lemonjuice ½

    juice ½

  • cucumber½

    peeled into strips

Step-by-step instructions

    First, make the scones. Line a baking tray with parchment paper and preheat the oven to 220 °C/200 °C with convection/gas 7. Place the flour and baking powder in a large bowl, add 1/4 tsp salt and mix well. Add the butter and rub it into the flour with your fingertips until the mixture resembles fine crumbs. Add the milk and black cumin seeds, and using a pastry cutter mix the ingredients until they come together into a soft dough.

    Turn the dough onto a work surface and briefly knead to bring the crumbs together. Generously dust the surface with flour and roll the dough to about 1.5 cm thickness. Use a 7 cm cutter to cut out 12 circles – you may need to gather scraps and roll again to get all 12. Place them on the tray, brush the tops lightly with beaten egg and bake for 10‑12 minutes until golden. Set aside to cool while you prepare the filling.

    In a bowl combine the chicken, chutney, mild curry seasoning, yogurt, mayonnaise, herbs, lemon juice and a pinch of seasoning. Chill until ready to assemble.

    To serve, split the scones and make sandwiches with the coronation chicken, cucumber and red onion. Secure the scones with a skewer if needed.
