Sauté the vegetables with chorizo and orzo to make this healthy, vibrant summer stew. You can add any leftover vegetables you have in the fridge to reduce food waste.

Ingredients

    chopped, green and white parts separated

  • red pepper1

    diced into small cubes

  • chorizo50g g

    diced into small cubes

  • garlic clove1

    minced

  • orzo75g g
  • smoked paprika½ tsp tsp
  • sweet corn200g can g

    drained

  • large tomato1

    diced

  • unsalted chicken or vegetable broth350ml ml
  • parsley½ small bunch of

    chopped

  • lemon½

    zest and juice

Step-by-step instructions

    Heat the oil in a deep skillet and sauté the white parts of the green onion, the pepper, and the chorizo for 8 minutes, until the pepper softens and the chorizo turns golden.

    Add the garlic, orzo, smoked paprika, sweet corn, and tomato, and sauté for another 2‑3 minutes. Pour in the broth. Bring to a gentle boil and cook for 8‑10 minutes, stirring frequently, until the orzo is tender. Stir in the parsley, the green parts of the green onion, and the lemon juice and zest.
