Chili tempeh stir-fry

Try popular tempeh – made from fermented soy beans – as a meat substitute. Besides being vegan, this stir‑fry is healthy and low‑calorie.

Ingredients

2 serv.
  • broccoli with long stems300g g
  • sesame oil½ tbsp підсмаженої

    ½ tbsp toasted

  • tempeh150g g

    cut into 2 cm cubes

  • garlic cloves2

    thinly sliced

  • ginger1 thumb-sized piece

    peeled and finely grated

  • red chili½ small

    seedless, finely sliced

  • gochujang paste½ tbsp
  • sesame seeds1 tsp
  • steamed brown rice

    for serving (optional)

Step-by-step instructions

    Boil the broccoli for 1 minute 30 seconds. Drain the water.

    Heat the oil in a non‑stick pan. Stir‑fry the tempeh for 2–3 minutes, then transfer to a plate. Stir‑fry the garlic, ginger and chili for 2 minutes. Add the broccoli and mix.

    Mix the gochujang with 2 tbsp water and the tempeh. Add to the pan together with the sesame seeds. Cook for 2 minutes. Serve with rice, if desired.
