Preheat the oven to 200 °C/180 °C with convection/gas 6. Place the pumpkin in a baking dish and toss with 1 tbsp oil and a generous amount of ground black pepper. Roast for 15 minutes, remove, flip the slices, sprinkle with chili powder and return to the oven for another 15‑20 minutes until soft and lightly browned.
While the pumpkin roasts, heat the remaining oil in a large wide‑bottom non‑stick pot or skillet. Add the onion and red pepper, cook for 5 minutes, stirring regularly until softened and lightly browned.
Add the garlic and ginger and quickly sauté for 1½ minutes. Sprinkle with cumin and coriander and stir‑fry for 30 seconds. Add the quinoa, green beans and corn. Pour in 600 ml (1 pint) of freshly boiled water, add ½ tsp coarse sea salt and bring to a boil, adding more water if needed.
Reduce the heat to a gentle simmer and cook for 12 minutes, stirring regularly. Add the kale and cook for another 3 minutes, or until the quinoa and vegetables are tender, stirring occasionally. Divide the dish between two deep plates or bowls and top with the roasted pumpkin.
