Step-by-step instructions

  1. 1

To make the cevapcici, place the minced meat in a bowl together with half of the finely chopped onion and garlic. Season with salt, 1 tsp paprika and a pinch of freshly ground black pepper. Mix thoroughly with your hands. Form a ball and return the mixture to the bowl for a few minutes to soften it. Add half of the finely chopped parsley. Shape 12 sausages about 3 × 10 cm and place them in the refrigerator.

  2. 2

To make the rice, heat 2 tbsp oil in a large pan. Sauté the pepper, the remaining onion and garlic for 2‑3 minutes until fragrant. Add the rice, paprika, tomato paste and sugar. Stir well and lightly fry for another minute, then pour in the dry red wine to deglaze. Add the chopped tomatoes and vegetable broth, bring to a gentle boil. Cover and simmer for 20 minutes over low heat until the rice is fluffy and cooked. Stir in the ajvar, peas and the remaining parsley into the cooked rice.

  3. 3

To cook the cevapcici, heat the remaining olive oil in a pan over medium heat. Add the sausages and fry for 5‑10 minutes until browned on all sides and cooked through. Serve with the rice and extra ajvar to taste. They can also be grilled for 5‑10 minutes. This recipe was provided by Das Kochrezept and has not been retested by us.
