Oat bake with blackberry and apples

Try a twist on your usual morning oatmeal with this healthy bake featuring blackberries and apples. Serve with milk or yogurt and maple syrup.

Ingredients

  • semi-skimmed milk500ml ml
  • cinnamon sticks2 small
  • cardamom pods6

    crushed

  • Gala apples2

    peeled, cored, diced 1 cm

  • large oat flakes200g g
  • egg1

    beaten

  • vanilla extract1 tsp tsp
  • baking powder1 tsp tsp
  • pecan nuts100g g

    coarsely chopped

  • blackberries320g g
  • milk

    or low‑fat yogurt and maple syrup for serving

Step-by-step instructions

    Preheat the oven to 200 °C/180 °C with convection/gas 6. Place the milk, spices and apples in a small saucepan. Cover, gently bring to a boil and simmer for 10‑12 minutes. Set aside to steep for at least 15 minutes.

    Remove and discard the spices, then transfer the apples and milk to a large bowl and roughly mash the apples with the back of a fork. Add the oats, egg, vanilla, baking powder, pecans and blackberries, and mix.

    Pour the mixture into a 2‑liter baking dish and bake for about 30‑35 minutes, until the centre is hot. Serve with milk or yogurt and maple syrup, if desired.
