Hearty Beef Stew with Red Wine

This also can be made in a crockpot. I add different veggies, cubed squash, and 1/2 can baby peas, just added the peas the last 5 minutes of cooking. This is great on a cold winters day. Enjoy!

Ingredients

6 serv.
  • flour2⁄3 cup
  • pepper1⁄4 teaspoon
  • beef chuck, cut in -13 lbs
  • olive oil1⁄3 cup
  • coarse onions, chopped1 cup
  • celery1 cup
  • garlic cloves, crushed3
  • condensed beef broth2 can
  • bay leaf1
  • dried thyme leaves1⁄4 teaspoon
  • parsley1 tablespoon
  • small potatoes, halved6
  • medium carrots, cut in large slices6
  • small onions, quartered2
  • mushroom1 lb
  • 1/2 cup water or 1/2 cup beef broth1⁄2

Step-by-step instructions

    Combine flour and pepper; coat beef cubes.

    Reserve remaining flour mixture. In 3 tablespoons of hot oil, brown beef, and remove when brown.

    Sauté onion, celery and garlic until tender.

    Return beef to pan.

    Add beef, broth, wine and spices.

    Bring to a boil, stirring occasionally.

    Reduce to simmer, cover and continue cooking for 1-3/4 hours.

    Add remaining vegetables and cook covered another 45 minutes longer or until meat and vegetables are tender, but not mushy.

    Thicken broth if necessary with 2 tablespoons of the flour mixed with 2 tablespoons water.

    Simmer until thick.
