Balsamic Pork with Watercress

A light, fragrant dish where juicy pork melts in a balsamic sauce with orange notes, and fresh watercress adds crunch and piquancy — an ideal dinner with minimal effort.

  • balsamic vinegar2 ст. л.
  • pure honey2 ч. л.

  • olive oil2 ст. л.
  • boneless pork steaks4

    about 175 g/6 oz each

  • watercress100 г

Step-by-step instructions

    Grate the zest of 1 orange, then cut the flesh into wedges (see instruction, p. 23). Squeeze the juice from the other orange. Mix the zest with half of the juice, balsamic vinegar, pure honey and minced garlic, set aside. For the dressing, whisk the remaining juice with Dijon mustard, 1 tsp oil and seasonings.

    Heat the remaining oil in a skillet, add the pork steaks and sear on both sides until golden brown, about 5 minutes total. Add the balsamic mixture, season, bring to a boil. Simmer for 5‑6 minutes, turning the meat occasionally, until it becomes tender.

    Meanwhile, place the watercress in a bowl, toss it with avocado, orange wedges and the dressing, and serve together with the pork.
