Braised Beef in Balsamic Sauce with Tender Vegetable Mash

Step-by-step instructions

    Preheat the oven to 170 °C (150 °C for convection, gas 3). In a heavy, oven‑safe pot heat the oil, add the onion and sauté for 8 minutes, stirring frequently until golden. Add the beef and garlic, quickly sear over high heat until the meat is browned on all sides.

    In a bowl pour 500 ml of boiling water over the dried mushrooms, let them hydrate briefly, then transfer the mushrooms together with the liquid to the pot. Add the balsamic vinegar, tomato purée, vegetable broth powder and mustard, and mix well. Stir in the carrots, mushrooms, thyme sprigs and a pinch of salt and pepper. Cover with a lid and place in the oven for 3 hours until the meat is tender. A few minutes before it is done, if the stew looks dry, add a little water.

    When the stew is almost ready, prepare the mash. In a pot bring water to a boil, add the diced turnip and potatoes, and cook for 12–15 minutes until the vegetables are soft. Drain, mash the potatoes and turnip, gradually adding ground black pepper. Steam or boil the broccoli (half a portion) for 5 minutes until tender. Serve the stew with the mash and broccoli. The remaining stew can be stored in the refrigerator for up to three days or frozen for a month. Before reheating, thaw in the fridge. Reheat the stew and mash in the microwave, and quickly steam or warm the leftover broccoli to retain vitamins.
