Pour ½ tbsp olive oil into a large skillet, heat over medium‑high heat and sauté the beef mince until browned. Transfer the meat to a deep plate, return the skillet to the heat and add the remaining oil.
Reduce the heat, add the finely chopped onion and leek, simmer for 8‑10 minutes until very soft. Then add the crushed garlic, diced red pepper and zucchini. Sauté until the vegetables are browned at the edges and excess moisture evaporates.
Return the meat to the skillet, add the canned tomatoes, tomato paste, broth and dried oregano. Stir, cover, and simmer over low heat for 35 minutes, stirring occasionally.
Meanwhile, cook the spaghetti according to the package instructions. A few minutes before it’s done, stir half of the grated Parmesan into the sauce. If the sauce is too thick, add a spoonful of pasta cooking water and mix.
Drain the spaghetti, toss it with the sauce to coat well, and season to taste. Garnish with the remaining Parmesan and a few basil leaves.
