Vitamin C (significant amount - ~60-160mg/100g, varies with ripeness), Vitamin A, Vitamin B6, Vitamin K. Also contains flavonoids and anthocyanins.
How to choose
Choose plump, dark purple/black berries. Avoid berries that are green, shriveled, or show signs of mold. Ripe elderberries are easily removed from the stem. Be *absolutely certain* you are identifying elderberries correctly, as unripe or other parts of the elderberry plant are toxic. Look for berries from trusted sources.
How to store
Fresh elderberries are best used immediately. If storing, refrigerate for up to 2 days. For longer storage, freeze the berries. They freeze well and retain their flavor. Elderberries can also be dried, but this alters the texture and some nutrients. Dried elderberries should be stored in an airtight container in a cool, dark, dry place.
