Tuscan Tomato Soup

An easy, flavorful recipe adapted from Cooking Light I've made many times.

Ingredients

4 serv.
  • 1-inch French bread cubes2 1⁄2 cups

    ~2½ slices

  • olive oil flavored cooking spray
  • olive oil1 teaspoon
  • garlic, crushed4 cloves
  • no-salt-added diced tomatoes, undrained2 cans

    14 1/2 ounce

  • chicken broth, undiluted1 can

    14 1/2 ounce

  • balsamic vinegar1 tablespoon
  • dried parsley flakes1 1⁄2 teaspoons
  • dried oregano1 teaspoon
  • pepper1⁄2 teaspoon
  • grated parmesan cheese4 -5 teaspoons

Step-by-step instructions

    Arrange bread cubes in a single layer on a baking sheet and lightly coat bread with spray.

    Bake at 400° about 10 minutes until dry and toasted.

    Heat oil in large saucepan over medium-low heat.

  4. 4

    Add garlic and sauté 2 minutes.

  5. 5

    Add tomatoes, pepper and bring to a boil.

    Reduce heat and simmer 10 minutes, stirring occasionally.

    Divide croutons among 4 or 5 bowls; ladle soup over croutons and sprinkle with cheese.
