  • yellow onion1 cup
  • fresh ginger1⁄2 cup

  • white raisins3⁄4 cup
  • light brown sugar2 cups
  • apple cider vinegar1 cup
  • fresh orange juice1⁄4 cup
  • fresh lemon juice1⁄4 cup
  • whole mustard seeds1 tablespoon
  • dried red pepper flakes1 teaspoon
  • cinnamon1 teaspoon

    Ground

  • clove1⁄4 teaspoon

    Ground

Step-by-step instructions

    Mango: Hard, ripe, peeled, seeded and sliced.

    Place all ingredients in heavy saucepan over medium heat.

    Bring to boil.

    Lower heat and simmer for about 20 minutes, stirring frequently.

    Remove from heat, cover, and let stand for about 12 hours.

    Again bring to a boil, lower heat, and cook for 15 minutes, stirring frequently.

    Remove from heat and immediately pour into hot sterilized jars.

  8. 8

    Vacuum seal.
