Peppercorn Crusted Pork Loin With Pepper Gravy

This is the meal my grandson calls the best meat he ever tasted. The whole family loves it too.

Ingredients

4 serv.
  • pork tenderloin1 1⁄4 lbs
  • peppercorn, ground (assorted)1⁄4 cup
  • cooking spray
  • olive oil2 tablespoons
  • flour1⁄4 cup
  • milk1 quart
  • peppercorns, crushed3 tablespoons
  • salt
  • butter2 tablespoons

Step-by-step instructions

    Sprinkle the peppercorns on a piece of foil.

  2. 2

    Spray the entire pork loin with cooking spray.

  3. 3

    Roll the tenderloin in the peppercorns until fully crusted and pat them into the meat.

  4. 4

    In a saute pan, quickly brown the pork on all sides.

  5. 5

    Place on a rack, uncovered in a 325 oven and roast for about 2 hours until meat thermometer reaches 170.

    For the Gravy:.

    With whisk mix flour and milk in large pan, add butter, peppercorns and salt.

  8. 8

    Cook until thickened, lower heat, simmer for 15 minutes.

  9. 9

    Slice meat into 1/2" slices.

  10. 10

    Serve with gravy.
