Bake a breakfast crumble filled with juicy berries, crowned with a crisp oaty almond topping. Serve with thick yogurt for a sweet and satisfying start to your day

Ingredients

  • mixed berries1 kg kg

    (blueberries, raspberries, blackberries, or strawberries), fresh or frozen

  • strawberry or raspberry jam3 tbsp tbsp
  • vanilla extract1 tsp tsp
  • lemon juice1 tbsp tbsp
  • golden caster sugar50g g
  • cornflour1½ tbsp tbsp
  • Greek yogurt or labneh

    to serve

  • porridge oats300g g
  • plain flour100g g
  • flaked almonds50g g

    crushed using your hands

  • ground cinnamon1 tsp tsp
  • butter150g g

    melted

  • golden caster sugar4 tbsp tbsp
  • honey or maple syrup5 tbsp tbsp
  • vanilla extract½ tsp tsp

Step-by-step instructions

    Heat the oven to 200C/180C fan/gas 6. Toss the berries in a large heatproof dish with the jam, vanilla, lemon and sugar. Roast in the oven for 10 mins, or until the berries are soft but holding their shape. Mix a few tablespoons of the juices into the cornflour in a small dish, then add the cornflour mixture to the berries, combining well.

    In a large bowl, combine the granola topping ingredients with a good pinch of salt. Squeeze the mixture in your hands to create some clumps. Scatter the mixture over the berries and return to the oven for another 20 mins, until crisp and golden. Serve with thick Greek yogurt or labneh.
