Ingredients

  • firm roma tomatoes, diced small6 -8
  • garlic cloves, peeled and minced3 -4
  • cup rice wine vinegar (regular or seasoned)1⁄4 cup
  • small zucchini, diced small1 piece
  • small yellow squash, diced small1 piece
  • jalapeno peppers, seeded if you want, finely minced3 -4 pieces
  • orange bell peppers or 1 purple bell pepper, seeded, membrane removed, diced small1 piece
  • medium white onion, peeled and diced small1 piece
  • English cucumber, diced1⁄2 cup
  • stalks celery & leaves, minced2
  • limes, juice of2
  • tablespoon fresh oregano1⁄2 tablespoon
  • tablespoons fresh sage leaves, minced2 tablespoons
  • salt, to taste
  • pepper, to taste

Step-by-step instructions

    Combine all ingredients in a non-reactive bowl.

    Let stand about 1 hour to allow flavors to marry.

    Adjust seasoning if necessary.
