Ingredients

2 serv.
  • cinnamon stick1 1
  • cardamom pods4 4
  • whole peppercorns4 4
  • cloves2 2
  • star anise1 1
  • black tea bags2 2
  • vanilla extract½ tsp ½ tsp
  • ground nutmegpinch of freshly pinch of freshly

    plus extra for serving

  • whole milk250ml 250ml
  • soft light brown sugar1 tsp 1 tsp
  • freshly brewed espresso60ml 60ml

Step-by-step instructions

    Toast the spices in a dry pan over low heat until fragrant, then transfer them to a teapot together with the tea bags, vanilla and nutmeg. Pour 250 ml of boiling water over and steep for 3 minutes.

    Transfer the milk and brown sugar to a small saucepan and warm over low heat, stirring until the sugar dissolves and the milk comes to a boil. Whisk with a frother until frothy.

    Divide the espresso between two cups. Strain the tea into a jug and pour it over the espresso. Slowly add the hot milk mixture, holding back some foam with a spoon, then top with milk foam and a pinch of nutmeg.
