Heat the oil in a large non‑stick pot over high heat. Season, then sear the chicken thighs on all sides for 4‑5 minutes. Remove with tongs and set aside on a plate.
Reduce the heat, add the onion to the pot and cook 8‑10 minutes until softened, adding a splash of stock if needed to prevent sticking. Add the garlic and cook 1 minute until fragrant, then add the yellow pepper.
Add the oregano, light brown soft sugar, mustard powder, Worcestershire sauce, tomato paste, diet cola, the remaining stock and low‑salt low‑sugar ketchup. Bring to a boil, then reduce heat, return the chicken to the pot and simmer covered for 10 minutes until the chicken is cooked through.
Increase the heat and boil for 10 minutes until the sauce reduces and thickens slightly. Serve, sprinkled with green onion, with rice or pasta.
