Crock Pot Black Bean Chili Con Carne

This is really good for tostadas, burritos, taco salad... We bought a slow cooker a few weeks ago and this is one of the first things we tried. Lots of healthy veggies and beans, and a great blend of spices too. It's from "Fix It and Forget It Recipes for Entertaining." You will have plenty of leftovers, so freeze some or just plan on serving lots and lots of people!

Ingredients

  • black beans1 1⁄2 lbs
  • ground beef2 lbs
  • large onions, chopped2
  • green pepper, chopped1
  • garlic cloves, minced3
  • salt2 teaspoons
  • pepper1 teaspoon
  • tomato paste6 ounces
  • tomato juice (or more)3 cups
  • celery salt1 teaspoon
  • Worcestershire sauce1 tablespoon
  • dry mustard1 teaspoon
  • cayenne pepper1⁄4 teaspoon
  • cumin1⁄4 teaspoon
  • chili powder3 tablespoons

Step-by-step instructions

    Soak beans 8 hours or overnight. Rinse and drain.

    Brown beef in large skillet.

  3. 3

    Combine all ingredients in 6-qt slow cooker (or divide between 2 smaller cookers).

    Cover and cook on low for 7-8 hours.
