Cranberry Pork Chops

Ingredients

4 serv.
  • pork chops, trimmed4
  • salt1⁄2 teaspoon
  • pepper
  • pineapple slices (8 1/2 ounce can)1
  • cranberry sauce, whole1⁄2 cup

    whole

  • chicken bouillon cube1
  • brown sugar2 tablespoons
  • vinegar2 tablespoons
  • green pepper1

    cut into 1-in strips

  • cornstarch2 tablespoons

Step-by-step instructions

    Render trimmings in skillet to obtain 1 tablespoon drippings.

    Brown pork chops in drippings.

  3. 3

    Season with salt and pepper.

  4. 4

    Drain pineapple, reserving syrup.

  5. 5

    Pour reserved syrup adn cranberry sauce over pork chops.

    Dissolve bouillon cube in 1/2 cup boiling water.

  7. 7

    Add brown sugar and vinegar.

  8. 8

    Pour over pork chops.

  9. 9

    Simmer covered, for 20 minutes or until pork chops are tender.

    Cook covered, for 10 minutes longer.

    Remove pork chops and pineapple to warm plattter.

    Combine cornstarch and 2 T. water in bowl.

    Add to cranberry mixture.

  14. 14

    Cook until thick, stirring constantly.

    Pour sauce over pork chops.
